Greetings and salutations, gluten free friends! I have a confession to make. I’m having a love affair with kale. Shhh, don’t tell spinach. It’s a very jealous leafy green.
Kale and I have not always seen each other as attractive. I’ve never liked the way it looked. It looks dry, ridged and very hard to digest. Turns out I was wrong. Kale tastes good. That’s really the bottom line. It’s good for you and taste good. It’s versatile, it can be made into chips, eaten in salads, used in sandwiches and so much more.
Yeah yeah, I’m behind in the kale fad. Kale is such old news and you’ve all eaten so much of it that you’re sick of it. Well, I am here to tell all of you who haven’t tried it to try it. I literally had to stop myself from eating the whole Stalk of it. I usually only have to do that with chocolate. I’ve eaten kale salads all week and used it in my sandwiches the last two days. I’ve eaten so much kale in the last three days. I recommend you eat some too.
What was even better than the kale was the dressing I made. I took a small bowl and added olive oil, lemon, salt and pepper, a dash of paprika, some balsamic vinegar, and some whole grain, French mustard and made the most amazing dressing I have ever had. I could not believe how tangy and flavorful it was. I know must salad dressing are already gluten free, but I loved the the graininess of the mustard with the richness of the olive oil, lemon and vinegar. This is definitely good for what kales you.
